Shrimp go from raw to perfect in about ninety seconds and from perfect to rubber in another sixty. That is the whole skill here. Everything else in this pot is forgiving.
Frozen raw shrimp are ideal — better value than the fresh counter and usually frozen fresher.
Shellfish is a strong iodine source, shrimp included, and it delivers it in a small, fast-cooking portion. The stew around it does the rest of the nutritional work, so you get a properly filling dinner from half a pound of protein.

Is shellfish high in cholesterol a concern?

Can I use pre-cooked shrimp?
You can, but add them off the heat at the very end — they only need warming, and they toughen quickly.
A bag of shrimp in the freezer is a dinner you can always make. If you have been using Lugol's Iodine while getting your intake up, keeping shellfish in rotation is one of the simplest ways to hold it.
