Wakame and Cucumber Salad with Sesame

This is the salad you make when you want something green and cold in five minutes flat, and it happens to be one of the most iodine-dense things you can put on a plate.

Dried wakame rehydrates almost instantly, so most of the work here is slicing a cucumber.

Why this one is iodine-rich

Wakame is a gentler seaweed than kelp or kombu, which is exactly why it is the one to eat often rather than occasionally. A small daily side like this adds a real amount without pushing toward the upper limit the way concentrated kelp tablets can.

Ingredients

Serves 2 as a side.

  • 2 tbsp dried cut wakame
  • 1 large cucumber, very thinly sliced
  • 1 tsp salt, for the cucumber
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp sugar or honey
  • 1 tsp toasted sesame oil
  • 1 tbsp toasted sesame seeds
  • 1/2 tsp red pepper flakes (optional)

Method

  1. Put the wakame in a bowl and cover with cold water. Let it sit for 5 minutes, then drain well and squeeze out the extra water.
  2. Toss the cucumber slices with the salt and let them sit for 10 minutes, then drain off the liquid that comes out. This is what keeps the salad crisp instead of watery.
  3. Whisk the vinegar, soy sauce, sugar and sesame oil together in a bowl.
  4. Add the wakame and cucumber to the dressing and toss well.
  5. Finish with sesame seeds and red pepper flakes. Best eaten within the hour, while the cucumber still has some crunch.

Notes and swaps

  • No wakame on hand? A sheet of nori, torn into small pieces, is a fine substitute — milder, but still a real source.
  • Make it a meal. Add cubed tofu or a soft-boiled egg and serve over rice.
  • Storage. Keeps a day in the fridge, though the cucumber softens. Best made fresh.

Common questions

Is dried wakame easy to find?
Yes — most grocery stores with an Asian foods aisle carry it, and it keeps for a year or more in the pantry unopened.

Can I eat this every day?
A small side portion like this is a reasonable everyday habit. Iodine has an upper limit as well as a lower one, so this is meant as one source among several rather than the only one.
